Takoyaki (literally grilled squid) is a specialty from Ôsaka. These little balls with a dice of marinated squid are served in 6, 8 or 10 and covered with Otafuku sauce (sweet and sour), sprinkled with Aonori (seaweed), with Katsuo Bushi (skipjack chips) and/or scallion. For the most hungry, Japanese mayonnaise is essential!!
In the late 20s, Tomekichi ENDO invented Takoyaki as it is now, replacing the Konnyaku (Konjac flour-based gelatinous stock) of Radio-yaki with pieces of squid, plentiful in Ôsaka bay. Since that day, the success of a store has become the cooking symbol of a region.
ATSU ATSU presents the traditional recipe described above at Japan Expo Sud, as well as new ones with shrimps and scallops.
