After ten years in Japan learning the craft at the hands of skilled Japanese masters, Charlotte came back in Alsace in 2019 with the desire to share her passion for Wagashi. With her budding compagnie Usagiya, Maison Alsacienne de Wagashi, established in Strasbourg, she delights her customers with delicately prepared mochi, dorayaki and other "kashi".
