Okonomiyaki

Introduction

Okonomiyaki, literally okonomi (what you like/wish) and yaki (grilled), is a Japanese dish made of batter and various ingredients cut in little pieces, and the whole thing is cooked on a hot plate.

It’s a typically Japanese dish and there is nothing like it really in Western cuisines even though it’s often compared to pizza, pancake, or omelette. There are many local recipes all over Japan, the most famous being Osaka’s and Hiroshima’s.

The batter is made of eggs, wheat flour, dashi (Japanese stock), and white cabbage. The batter is cooked on a hot plate with various added ingredients, such as pork, squid, shrimps, scallion, and more. When it’s done, garnish is added: mayonnaise sauce, okonomi sauce, katsuobushi (literally dancing fish), aonori seaweed, or green onions.
